Friday Jello Salad...

For a bit of fun, I thought I'd post a jello salad recipe each Friday. (If I remember it.)

This week is...

Lemon Lime Vegetable Salad (courtesy of Allrecipes.com)

INGREDIENTS

* 1 (3 ounce) package lemon flavored gelatin mix
* 1 (3 ounce) package lime flavored gelatin mix
* 4 cups boiling water
* 1 tablespoon apple cider vinegar
* 2 stalks celery, finely chopped
* 1/2 cup chopped pimento-stuffed green olives
* 2 carrots, peeled and grated

DIRECTIONS

1. In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, and boiling water until gelatin has dissolved. Stir in the apple cider vinegar, cover, and refrigerate for about 1 hour to thicken.
2. When the gelatin is thick but not set, stir in the celery, olives, and carrot so they are evenly dispersed throughout. Pour into a 1 quart mold and refrigerate until firm, at least 3 hours. To serve, unmold onto a plate.


Why yes...that IS OLIVES they have in that recipe.

Yep sounds gross with the olives. I've been looking forward to making jello salads now. I once bought a rose plastic mold but then it disappeared before I could fully figure out how to use it. I also have a zombie brain jello mold that I adore and used once for a halloween party, it worked well. I need good recipes though, jello molds have always been fun. :)

In fact, you're making me crave jello right now. Hmmm, wonder if I even have any.
